Introduction
In June 2023, we received an inquiry from a craft distiller in Ontario, Canada. The client had already been running a small still to produce rum, whiskey, and corn liquor with an alcohol content of around 65%. With growing market demand, they aimed to expand production capacity and upgrade to a professional system. After one month of technical discussions and customized design, the project was finalized with a 300L copper distillery equipment setup.
Project Configuration
The Canadian client required a flexible and durable distilling system suitable for multiple spirit types. The final configuration included:
- 300L Copper Still Pot – Electric heating system equipped with a dry-boil level gauge to ensure safe operation.
- Copper Column with 4 Plates & Copper Dephlegmator – Designed for high-quality spirit purification and smooth flavor development.
- Copper Gin Basket – Allows the production of gin and botanical-infused spirits, expanding product variety.
- Copper Condenser – Efficient cooling and condensation for consistent spirit output.
- Agitator with CSA-Certified Explosion-Proof Motor – Ensures safe and reliable mixing during distillation.
- CSA-Certified Explosion-Proof Pumps – For mash transfer and CIP (clean-in-place) system, guaranteeing safety and convenience.
- CSA-Certified Electrical Control Cabinet – Full compliance with Canadian standards, ensuring operational safety and long-term reliability.

A 300L distillery system is an ideal size for craft distilleries aiming to scale up production while maintaining artisanal quality. Choosing the Right Distillation Equipment for Different Spirits
Different spirits require specific equipment design to achieve authentic character and consistent quality.
Whiskey Distillation Equipment
Whiskey is typically distilled in traditional copper pot stills, which enhance flavor complexity by interacting with the spirit vapor. A simple pot still with a wide neck is often preferred to retain heavier congeners, creating a rich, full-bodied whiskey.
Gin Stills
Gin requires a rectification column with botanical baskets for vapor infusion. The column provides higher rectification levels, while the gin basket allows for the extraction of botanical flavors such as juniper, citrus, and spices.
Rum Distillation System
Rum can be distilled either in pot stills for bold, robust flavors or in column stills for lighter, cleaner profiles. A hybrid system (pot still + rectification column) provides flexibility to produce both styles.
Vodka Equipment
Vodka requires a high level of purification, best achieved with a tall rectification column featuring multiple plates or packed sections. This ensures maximum removal of impurities and a clean, neutral spirit.
Brandy Stills
Brandy distillation benefits from copper pot stills with a gentle heat source to preserve delicate fruit aromas. A short column or simple pot design is usually ideal.
Key Components of the Distillation System
Onion Head
Copper construction enlarges spirit contact area, removes volatile sulfides, and improves flavor through reactions with acids and fats.
Condenseur
Copper cooling tubes transfer heat to circulating water, condensing vapors into distillate. Integrated ports ensure stable thermal regulation.
Distillation Column
Equipped with bubble cap trays and sight glasses, the 4-plate column ensures precise congener separation for whisky and gin. A top dephlegmator enhances alcohol-water separation.
Large-View Tempered Glass Manhole
304 stainless steel with tempered glass, offering excellent sealing and safe visual monitoring of tank contents.
Distillation Pot
Copper inner shell with stainless steel outer shell, fitted with thermometer, pressure gauge, probe, safety valve, CIP ball, and drain valve.
Gin Basket
Designed for gin production to infuse botanicals, enriching aroma and taste.
