Pasteurization is one of the most critical processes in beer production, ensuring product safety, extending shelf life, and maintaining flavor stability. The pasteurization process is highly automated and precisely controlled. Finished beer is pumped into a plate heat exchanger, where it is preheated to approximately 65°C. Hot water at around 85°C further heats the beer to the target sterilization temperature of 75°C. The beer then enters a holding tube and remains at constant temperature for 30 seconds, achieving approximately 25 PU (Pasteurization Units), which effectively destroys spoilage microorganisms and harmful bacteria.

After sterilization, the beer is rapidly cooled to 12°C through the heat exchanger and then further chilled to around 2°C before entering the buffer tank for filling. This continuous process ensures excellent microbiological stability while preserving fresh beer flavor.

Modern flash pasteurizers are equipped with intelligent temperature control and automatic protection systems. If the sterilization temperature drops below the set point, the system automatically recirculates the beer to ensure complete pasteurization. Once the required temperature is restored, the equipment resumes normal production automatically. In addition, alarms and automatic shutdown functions protect the system if pressure, flow rate, or temperature exceed preset limits.

2. Tunnel Pasteurizer: Continuous Post-Packaging Beer Pasteurization

The tunnel pasteurizer is a continuous sterilization system designed for bottled and canned beer after filling and sealing. It is widely used in large-scale brewery production lines and beverage factories for beer, juice, tea drinks, and carbonated beverages.

The system uses multi-stage warm water spraying to gradually heat, sterilize, and cool packaged products. A typical tunnel pasteurizer consists of:

  • Conveyor system
  • Spray heating system
  • Multi-zone temperature control system
  • Water circulation system
  • Electrical automation system

The equipment is divided into three main sections: preheating zone, pasteurization zone, and cooling zone. Depending on production requirements, the machine can include 7–11 temperature zones for precise thermal control.

During operation, sealed bottles or cans move through the tunnel on a variable-speed conveyor. Warm water is sprayed evenly over the packages to achieve gradual heating and cooling, preventing thermal shock, package deformation, or bottle breakage.
