1. Milling – The Foundation of Whisky Quality

By achieving the ideal “crush but not pulverize” effect, it fully releases starch from malt while keeping husks largely intact. This creates a natural filtration layer in the next mashing stage, improving extraction efficiency and preventing lautering blockages. The milled malt is then mixed with water and transferred to the mash tun.
2. Mashing – Converting Starch into Fermentable Sugars
Whisky mashing typically follows a single-step process at 65–68°C. This temperature range efficiently converts starch into fermentable sugars, producing a clear and stable wort. The wort serves as a high-quality “nutrient base” for yeast activity during fermentation—playing a decisive role in both the whisky’s yield and its foundational flavor.
3. Fermentation – Controlled Environment for Flavor Development

5. CIP Cleaning – Automated Sanitation for Consistency

6. Distillation – The Heart of Whisky Production
Primary Distillation (Wash Still)

Spirit Distillation (Spirit Still)
The second distillation refines the low wine through precise “cutting” of the heads and tails. By removing methanol, fusel oils, and other unwanted compounds, only the pure, flavor-rich middle cut—the “heart”—is collected. This step determines the ultimate quality ceiling of your whisky.
Spirit Collection & Maturation
The purified spirit, typically 60–70% ABV, is collected in a holding tank before aging. It already displays a defined aroma structure and smooth body, setting the stage for maturation.
During oak barrel aging, the spirit slowly interacts with the wood—absorbing color, tannins, and complex flavor compounds—eventually transforming into a rich, mature whisky with depth and character.
