I. Overall Positioning and Core Advantages of the Equipment

The 200L scientific research and teaching craft beer experimental system is a small-scale integrated brewing system customized exclusively for teaching and scientific research scenarios. Different from large-scale commercial brewing equipment and simple household brewing devices, it fully meets the targeted needs of teaching and research work. Adopting a slide rail mobile structure, the equipment covers a small floor area with a neat layout and convenient movement, perfectly adapting to the limited space of laboratories and teaching training classrooms.

The automation level of the system can be flexibly configured. It supports full manual step-by-step operation for basic practical teaching, allowing students to clearly observe and master every process link including saccharification, filtration, boiling and fermentation. Meanwhile, it can be switched to semi-automatic or fully automatic operation modes to meet standardized process experiments and batch trial production. In addition, the optimized and simplified operation process reduces energy consumption, material loss and operation and maintenance costs. With high cost performance, it is an optimal solution for university brewing teaching, institutional process innovation and small-scale craft beer trial production.

II. Project Production Capacity Planning

In accordance with the rhythm of teaching training, the frequency of scientific research experiments and the demands of small-batch trial production, we have formulated a scientific and reasonable production capacity plan for the 200L craft beer equipment, ensuring sustainable daily teaching and continuous scientific research experimentation:

  • Batch Saccharification Capacity: 200L per batch, perfectly suitable for small-scale experiments and small-class teaching training with controllable material consumption and high experimental fault tolerance.
  • Annual Operation Days: 330 days of available operation, training and experimentation every year, matching the academic calendar of universities and the annual research and development cycle of scientific institutions.
  • Shift Configuration: Single 8-hour working shift, conforming to campus teaching schedules and daily scientific research working hours for easy operation and management.
  • Daily Batch Output: One batch per day, ensuring progressive teaching training and stable and controllable data for scientific research experiments.
  • Average Fermentation Cycle: 20 days for conventional beer fermentation, complying with standard craft beer fermentation techniques and supporting experimental fermentation of various beer types.
  • Total Fermentation Storage Capacity: The total volume of the fermentation system exceeds 4000L, providing sufficient space for synchronous multi-batch and multi-formula experiments and effectively improving scientific research efficiency and training capacity.

III. Complete Equipment Configuration

The full set of 200L scientific research and teaching craft beer equipment consists of eight core systems: malt crushing, saccharification and brewing, spent grain treatment, fermentation, bright beer processing, refrigeration, intelligent control, and CIP cleaning. It covers the entire beer brewing process from raw material processing and bright beer production to equipment cleaning, fully meeting the demands of full-process teaching training and refined scientific research experimentation.

1. Malt Crushing System

Equipped with a professional malt crusher with a processing capacity of 100kg per hour. The crushing fineness can be adjusted according to brewing formulas and saccharification process requirements. Featuring uniform crushing and complete husk retention, the equipment ensures high wort extraction rate. It also supports teaching of raw material pretreatment and comparative experiments on crushing parameters for scientific research purposes.

2. Saccharification and Brewing System

Two mainstream two-vessel configuration solutions are available for flexible selection based on teaching and research priorities. The first is the classic combination of saccharification & filtration tank plus boiling & whirlpool tank, with clearly divided process sections, ideal for novice teaching and helping students distinguish filtration, boiling and whirlpool processes. The second is the high-efficiency integrated combination of saccharification, filtration & whirlpool integrated tank plus boiling tank, featuring higher integration and space-saving design, suitable for rapid new process experiments and small-batch trial production.

The system is equipped with a 3㎡ plate heat exchanger with a working pressure of 1.25MPa, delivering high heat exchange efficiency and precise temperature control for rapid wort cooling and stable wort temperature. A titanium rod wort aeration device is configured to provide uniform and sterile oxygenation, accurately regulating wort oxygen content to meet the oxygen supply demands of different yeast fermentation processes. A 5L SUS304 stainless steel yeast adding tank is equipped for sterile and corrosion-resistant quantitative yeast addition, ensuring accurate and consistent experimental data.

3. Spent Grain Treatment System

Fitted with a dedicated spent grain storage tank with manual grain discharge design. The simple and intuitive operation enables students to observe the whole process of spent grain separation and discharge, facilitating practical teaching demonstration. The tank can temporarily store spent grain after brewing to prevent on-site contamination and keep the laboratory and training venue clean, with simple daily maintenance and low failure rate.

4. Fermentation System

The fermentation system has a total volume of over 4000L, configured with 10 sets of 200L fermentation tanks and 5 sets of 400L fermentation tanks. The combined configuration of multiple specifications and quantities offers prominent advantages. It supports synchronous comparative experiments of different formulas, fermentation temperatures and fermentation durations, providing sufficient test carriers for beer process research and formula optimization. Meanwhile, it allows simultaneous practical training for multiple classes and batches of students, greatly expanding the coverage of teaching training. All tanks are made of food-grade stainless steel with excellent sealing and heat preservation performance, enabling controllable temperature and pressure to fully meet standard craft beer fermentation requirements.

5. Bright Beer System

Equipped with 2 sets of 200L bright beer tanks and 1 set of 400L bright beer tank, undertaking subsequent processes of pressure stabilization, clarification and temporary storage for mature beer after fermentation to form a closed-loop brewing process. The multi-specification tanks adapt to different batch fermentation outputs, supporting finished product temporary storage, taste fine-tuning, process sample retention and product testing for teaching and research, ensuring complete traceability of experimental samples and training finished products.

6. Refrigeration System

Composed of a 600L large-capacity ice water tank and a 5HP professional refrigeration unit, the system delivers stable refrigeration, precise temperature control and fast cooling speed. It provides a stable cold source for wort cooling, saccharification temperature reduction, constant fermentation temperature and bright beer preservation throughout the brewing process. It effectively avoids the impact of temperature fluctuation on beer taste and fermentation effect, ensuring consistent teaching training results and accurate and reliable scientific research experimental data.

7. Intelligent Control System

Adopting an industrial PLC intelligent control system, it integrates full-process parameter regulation, data recording, equipment start-stop control and fault early warning functions. It supports three operation modes: manual, semi-automatic and full-automatic. The manual mode is designed for basic teaching to help students master every operational step proficiently. The automatic mode locks process parameters accurately for standardized scientific research experiments, and records key data such as temperature, time and pressure to support subsequent data analysis and process optimization.

8. CIP Cleaning System

Fitted with a mobile CIP cleaning pump with a flow rate of 3㎡/h, capable of dead-angle-free sterile cleaning and disinfection for saccharification tanks, fermentation tanks, pipelines, heat exchangers and all other equipment. The flexible mobile design supports rotational cleaning of multiple tanks to effectively avoid cross-contamination and ensure a sterile and safe brewing environment. The simple and operable cleaning process also serves as an important practical training module for equipment maintenance and food safety teaching.
