In order to meet the growing demand for its products, Vitis Industry in Papua New Guinea launched an expansion project in 2017. To support their increased production capacity, the brewery decided to invest in advanced brewing equipment supplied by Meto.
The equipment package included:
12T Fermentation Tanks – providing reliable fermentation capacity with superior hygiene and durability.
Bright Beer Tanks (BBT) – ensuring stable storage, maturation, and improved beer clarity before packaging.

Basic Structure and Principles of a Beer Fermentation Tank

Recommendations for Selecting the First Fermentation Tank
Capacity Selection
Choose a tank 2–3× your daily brewing volume to ensure flexible scheduling and meet peak demand. For example: 500 L/day → 1000–1500 L tank; 1000 L/day → 2000–3000 L tank.
Material and Corrosion Resistance
Food-grade stainless steel is standard. SUS304 is economical for most beers, while SUS316 offers superior corrosion resistance, ideal for sour or specialty beers. Consider your product type, environment, and budget.
Cooling and Temperature Control
Temperature affects yeast metabolism and beer flavor. Full-jacket cooling ensures uniform temperature for large tanks; sectional jackets allow independent zone control, preventing localized overcooling. Place temperature probes based on fermentation needs.
Internal Polishing and Welding
Smooth, polished surfaces (<0.4 μm) reduce microbial buildup. Welds should be pickled, passivated, and finely polished to extend tank life and maintain hygiene.
CIP System and Operational Convenience
A reliable CIP (Clean-In-Place) system ensures cleaning of all areas, including the conical bottom and ports, using caustic, acid, and hot water cycles. Well-placed sight glasses, sampling ports, and drains improve efficiency without compromising sanitation.
