Five-Vessel Mash System: Precision for Traditional & Modern Brewing
The centerpiece of the project is a 1000L five-vessel brewhouse, consisting of:
- Mash tun
- Lauter tun
- Boil kettle
- Whirlpool
- Dedicated cereal cooker for decoction and adjunct mashing
This configuration gives Ping Pong Brewing the flexibility to produce both traditional European lagers and modern specialty beers with equal precision. The addition of a cereal cooker makes it possible to run full decoction mashing, a hallmark of authentic Czech and Bavarian-style lagers.
Advanced Engineering Features
- High-capacity lauter tun (450 kg grist per batch)
Allows for efficient lautering even with high-adjunct or high-gravity recipes, providing flexibility for pilsners, double IPAs, stouts, and collaboration brews. - Nitrogen inerting system during mashing and transfer
Protects the wort from oxygen exposure at critical stages, reducing oxidation, enhancing flavor stability, and improving the shelf life of finished beers. - ndustrial-grade HD cameras & intelligent LED vessel indicators
Each tank is equipped with heat-resistant cameras and multi-color LED status lights, enabling brewers to monitor the entire process remotely from a phone or tablet. This is a key step toward a semi-autonomous “smart brewery” ecosystem.

With optimized heat exchange, smooth workflow layout, and synchronized pump/valve automation, the system allows 4–6 brews per day, ensuring the brewery can meet growing market demand without compromising quality or workflow efficiency.

Fermentation & Conditioning System: Designed for Precision Fermentations
The fermentation cellar is equipped with a combination of 1MT and 2MT vertical fermenters, supplemented by a 1MT horizontal bright tank. Together, this setup supports an annual output of up to 2,000 hectoliters, with room for expansion.

Lower hydrostatic pressure creates optimal conditions for yeast to express fruity, complex ester profiles—ideal for hazy IPAs, saisons, farmhouse ales, mixed fermentation beers, and experimental batches. - Internal lighting & clear-view sight glasses
Allow brewers to directly observe fermentation dynamics such as krausen height, yeast activity, and protein/hop sedimentation. This greatly improves real-time decision-making. - Highly polished internal surfaces (≤0.4 μm Ra)

Each tank is fitted with:
- Dual-zone cooling jackets

Siemens PLC Control System: Intelligent Brewing at Your Fingertips
The entire brewhouse and cellar are governed by a Siemens PLC-based control panel with a 15-inch HD industrial touchscreen. The interface is divided into two logical control zones:
- Brewhouse Process Control – mashing, lautering, boiling, whirlpool, heating, and transfers
- Fermentation Management – tank temperatures, glycol distribution, pressure monitoring, CIP routing

- Recipe storage & programmable brewing sequences

These ensure uninterrupted supply for brewing, cleaning, and heat recovery, improving energy efficiency.
Dedicated Transfer Lines

- Wort
